Cooking is something I really enjoy doing, so, making a soup seemed like a perfect antidote to all the recent 'head work' required to make my new website.
I had spotted this Gordon Ramsay recipe in the weekend papers, and made it last night. It also served as an excellent way to celebrate the website going live.
CURRIED PARSNIP AND APPLE SOUP:
1 tbsp olive oil
2 large onions and two garlic cloves chopped
1 tsp cumin seeds
salt and pepper
1 tsp curry powder
half tsp ground ginger
700g parsnips and 1 medium Bramley apple, peeled and chopped
2 tbsp runny honey
1.5 litres of vegetable or chicken stock
Heat the butter and oil in a large heavy - based pan, until the butter begins to foam, stir in the onions and cook for 2 minutes. Dry toast the cumin seeds until brown and fragrant. Grind these in a pestle and mortar with a pinch of sea salt, mix in the curry powder and ground ginger and stir into the onions. Add the parsnips, apple and honey and cook for several minutes. Pour in the stock, bring to the boil, and simmer until the parsnips are cooked. Whiz the soup in a blender until smooth, return to pan, season and reheat to serve.
